Poor mans' pudding

- 1 cup flour
- 3/4 cup sugar (1/2 should also work)
- 1 tbsp butter (room temperature!)
- 1 egg (room temperature!)
- 1 tbsp vinegar
- 1 tsp apricot jam
- 1 tsp bicarbonate of soda
- 1 cup milk
- 1/2 tsp salt

- mix flour, salt, sugar.
- rub butter in.
- beat egg & jam together, add to flour mixture.
- mix milk with bicarb, then add to mixture.
- add vinegar and beat.
- bake for 30 mins at 180°C in buttered dish. (big dish!)
sauce
For pouring over pudding after baking.
- 1 cup milk (creamy)
- 1 cup water
- 1 cup sugar (3/4 should also work)
- 1 tbsp butter
- 1 tsp vanilla essence
- (1 tot brandy // Elizabeth’s recipe doesn’t include this!)
- Mix all except brandy and boil.
- (When boiled and slightly cooled add brandy.)
- Pour warm sauce onto pudding. don’t worry, it’s not too much sauce

brandy sauce (optional)
- 1 cup sugar
- 1 1/2 cup water
- cinnamon sticks
- 1/2 tsp salt
- 1 1/2 tsp flour in milk to thicken
- 1 tot brandy
- Boil sugar, water, cinnamon and salt (5-8 min).
- When boiling add thickener,
- when finished add brandy.
