Carrot cake

Ingredients
- 1 cup brown sugar
- 1,5 cup flour
- 1 teaspoon baking powder
- 1 teaspoon bicarbonate of soda (koeksoda)
- 1 teaspoon cinnamon
- 1 teaspoon koekkruiden / mixed spice
- 1 teaspoon vanilla essence
- 2 eggs
- Pinch of salt
- 100g chopped nuts (walnuts work well; roughly 3/4 of nuts in cake,
other 1/4 on top of icing)
- 0,5 cup grated apple
- 0,5 cup grated carrot
- 0,75 cup oil
Topping:
- 1 thing of mascarpone
- enough icing sugar (100-200g?)
Method
- Beat eggs, sugar and oil
- Add apple and carrot
- Mix all dry ingredients (minus walnuts)
- Beat 2 minutes with wooden spoon
- add walnuts
- Pour into greased tin
- Bake +/-20min at 190 degrees C (18/4/2013: took about 35 minutes in
convection oven at 180)
(maak van gelijke delen mascarpone en poedersuiker een mengsel dat als
topping voor op de cake kan dienen. possibly add lemon/zest.)
